let's have s'mores and then some more

March 13th, 2014
As probably mentioned in previous posts, there are certain things that are not here in Sweden but are in the states. For example:
Chocolate chips
Graham crackers
Sugar coated kid's cereal
Broth
Evaporated Milk
Condensed Milk
Thick Crust Pizza
and
S'mores

On Thursday, Sweden was bright and sunny and beautiful just like when I first came and as a Californian at heart, I need the sun and sunshine keeps me alive.
So upbeat, happy me decided to bake some s'mores.
And in relation to the beginning statement above, people in the states, so grateful and lucky, have grown up with the campfire treat of S'mores.
Graham crackers with Hershey's chocolate piece and a roasted marshmallow all smushed together to create a chocolatey, gooey, sticky, sugary delicious summer treat.
For those reading and are not familiar with what a S'more looks like or can't quite get the full picture in your head, here is the full picture here:
So on this sunny day I made an adaptation of these summer treats

S'mores Bars
1/2 cup butter, softened
1/4 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
1 1/3 cups flour
3/4 cups graham crackers (or Maria cookies if graham crackers don't exist where you are)
1 teaspoon baking powder
1/4 teaspoon salt
2 milk chocolate bars-whole
1 1/2 cups marshmallows or marshmallow fluff

Preheat oven to 350F.
Cream butter, sugar, brown sugar, egg and vanilla together in a large bowl.
In a separate bowl, stir flour, graham crackers, baking powder and salt.
Slowly incorporate dry ingredients into butter mixture.
Press half of the dough on greased 9x9 baking pan.
Set chocolate bars on top.
Spread marshmallow (fluff) over chocolate and top with remaining dough.
Bake for 30-35 minutes until golden and marshmallows are oozing out.
Leave out for corridor mates and watch it disappear within hours.
I really missed this view.

I tried to cut the bars to make them easier to serve, but they were too gooey to lift so I left them cut and let my corridor mates just eat it out of the pan.
I don't think they minded.

Hope to have s'more sunshine coming soon and hope your day has s'more sunshine as well.
And yes, there will be s'more puns coming up, it's not a blog post without some puns.
